Understanding the value of mentorship and team development, Chef Nico Schuermans is committed to supporting cooks in developing their own cuisine style. Each month, an up-and-coming talent from Chambar’s kitchen will take the lead, presenting a set menu with dishes inspired by their heritage. Showcasing nostalgic home cooking or unique ingredients from where they grew up, these chefs will offer their signature interpretations, bringing fresh global flavours to the table.

Born in Monterrey and shaped by the culinary traditions of Mexico City, Christopher Vega’s connection to food runs deep. His passion for cooking emerged in his mother’s kitchen, where he learned the power of food to gather and nourish family.

Christopher moved to Canada in his youth. He began his professional culinary career in 2017 at Oretta in Toronto. A holiday to Vancouver in 2021 led him to Chambar for dinner—an experience that left a lasting impression. Compelled to be part of what he felt that night, he asked to meet with our Chef, who offered him a trial in the kitchen that same week. Shortly thereafter, Christopher relocated to Vancouver to join the Chambar team.

Now, as part of his apprenticeship, Christopher presents a Mexican-inspired menu that honours his roots. Each dish blends the bold, vibrant flavours of his heritage with the refined technique and creativity he’s developed throughout his journey—an expression of tradition, passion, and growth.
