Join Cyril DeLarue, the great-grand nephew of Madame Lily Bollinger and Business Development Manager of the renowned Champagne house for an intimate four-course dinner, paired beautifully with a selection of Champagne Bollinger.

Founded in 1829 in the village of Ay, by 1884 Bollinger had received a Royal Warrant from Queen Victoria. Adding to its prestige, 1979 marked the beginning of one of the longest standing relationships in cinematic history; Bollinger has been the exclusive Champagne of James Bond ever since. From 1941 – 1971 the great house was brilliantly managed by the indomitable Elisabeth Bollinger, who famously made one of the greatest pronouncements ever made about Champagne: 
 
“I drink it when I’m happy and when I’m sad. Sometimes I drink it when I am alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and I drink it when I am. Otherwise I never touch it – unless I’m thirsty.”

Chambar is excited to announce their collaboration dinner with Sea Cider Farm & Cidery on Tuesday 9, April 2019. 

This 4 course dinner with be paired with a variety of ciders that will entice your senses and leave your mouths watering for more. 

Sea Cider is a farm-based cidery located on the Saanich Peninusula just minutes from Victoria. Their ten-acre farm is home to over 1,300 apple trees, made up of over 50 variets of heritage apples. Sea Cider opened its farm gate for business in 2007 when owner Kristen Jordan purchased the property with a vision of creating an organic farm and orchard and producing traditional fermented artisan ciders. They continue to pride themselves on crafting traditionally fermented artisan ciders.
