Understanding the value of mentorship and team development, Chef Nico Schuermans is committed to supporting cooks in developing their own cuisine style. Each month, an up-and-coming talent from Chambar’s kitchen will take the lead, presenting a set menu with dishes inspired by their heritage. Showcasing nostalgic home cooking or unique ingredients from where they grew up, these chefs will offer their signature interpretations, bringing fresh global flavours to the table.

Samson was born and raised in a small town in Eritrea, the youngest of six siblings. With a big family to feed, his mother’s kitchen was always full of life, flavour, and spice; especially her signature beef stew. Watching her cook hearty meals with care and creativity sparked Samson’s own love for food and planted the seed for a future in restaurants.
After moving to Canada in 2017, Samson began his culinary career at Cactus Club before joining Chambar in 2018. He started on the fry station speaking no English and learned the language through hard work and support from the team who he credits with playing a key role in his growth. He’s since worked his way up through the ranks to Sous Chef.
Samson recently returned from a meaningful trip to Eritrea, where he married the love of his life. Now back in the kitchen at Chambar, he’s been busy preparing for a special milestone: his Apprentice Dinner. He looks forward to sharing flavours inspired by his roots and his journey.
