Apprentice Dinner - Vol 4

Understanding the value of mentorship and team development, Chef Nico Schuermans is committed to supporting cooks in developing their own cuisine style. Each month, an up-and-coming talent from Chambar’s kitchen will take the lead, presenting a set menu with dishes inspired by their heritage. Showcasing nostalgic home cooking or unique ingredients from where they grew up, these chefs will offer their signature interpretations, bringing fresh global flavours to the table. 

Join us for Vol. 4, featuring a homestyle 4 Course meal by Mickael Kean. 

Raised in the rural farming village of Longueville, Belgium, Mickael Kean grew up surrounded by food, flavour, and hard work. With both parents cooking at home—his mother training in pastry and catering, and his father working in wine and specialty meat distribution—meals were always at the centre of family life. 

Mickael began catering events on a nearby farm as a teenager and later studied hotel management before pivoting to a hands-on culinary education. At 17, he competed in Comme un Chef, a national cooking competition, finishing 4th out of 350 contestants. He went on to stage at several Michelin-starred kitchens, including Comme Chez Soi, where Chef Nico had also worked earlier in his career. 

Drawn to Canada in search of a more relaxed food culture, Mickael landed at Chambar in 2018, starting as a polisher while learning English. Over the years, he worked his way through every station before becoming Executive Chef. Today, he brings a mix of discipline, creativity, and warmth to the kitchen. For his Apprentice Dinner he draws on classic Belgian techniques, with local ingredients.

Join us Wednesday, July 9th, as Chambar teams up with Vancouver Island's Sheringham Distillery to celebrate the vibrant seasonal flavours of British Columbia.

Chef Nico Schuermans, our Chambar bar team, and Gareth Jones of Sheringham will collaborate to take guests on a guided journey through a three-course dinner with four cocktails. Each dish will be thoughtfully paired with a cocktail that showcases the bounty of BC’s local ingredients.

To celebrate National Belgian Day, this medieval feast inspired by Chef Nico Schuermans’ Belgian roots draws on historical recipes and the age-old tradition of communal dining—an expression of warmth, heritage, and shared experience.
 
Belgium’s food culture is rooted in generosity and togetherness, values that reflect Chambar’s own philosophy. In reviving the festive spirit of a medieval banquet, we honour not only our culinary past, but also the joy of gathering.
 

$120 per person includes a multi course dinner & a Belgian welcome beer from our friends at McClelland Premium Imports. Additional beverages are available for purchase night-of. 

Communal tables and family style platters.
